Pixelmon is a long-running mod that brings Pokémon into Minecraft. You find creatures in the wild, catch them in Poké Balls, level them up and battle in turn-based fights. Pixelmon servers add multiplayer layers on top of the mod.

Pixelmon servers cannot be joined with an unmodded client. You need the Pixelmon mod for the exact Minecraft and Forge version the server runs, usually through a launcher profile or the server's own modpack. Check the version first: servers have run on versions such as 1.12.2, 1.16.5 and newer releases. For a different take on creature collecting, look at Cobblemon servers, which use a separate mod.
