Pixelmon servers cannot be joined with an unmodded client. You need the Pixelmon mod for the exact Minecraft and Forge version the server runs, usually through a launcher profile or the server's own modpack. Check the version first: servers have run on versions such as 1.12.2, 1.16.5 and newer releases. For a different take on creature collecting, look at Cobblemon servers, which use a separate mod.
